Sous vide cooking works by holding food at a precise, constant temperature for a set duration, but choosing the right combination of the two is less intuitive than conventional cooking, where higher heat almost always means faster and food safety is judged by a single target temperature. Because sous vide often cooks at temperatures lower than traditional safe-minimum guidelines, food safety instead depends on how long that temperature is held, a concept called pasteurization. Understanding this time-temperature relationship is the key to using sous vide safely and getting consistent, restaurant-quality texture.
Traditional food safety guidance, like the USDA's recommendation to cook poultry to an internal temperature of 165°F (74°C), is based on an instantaneous kill: at that temperature, harmful bacteria such as Salmonella are destroyed essentially immediately. But bacterial destruction actually follows a logarithmic curve with both temperature and time, meaning a lower temperature held for a longer duration can achieve the same reduction in pathogens as a brief moment at a much higher temperature. This is the scientific basis for USDA and food-safety-lab pasteurization tables, which specify, for example, that chicken held at a core temperature of 140°F (60°C) for roughly 35 minutes achieves a comparable pathogen reduction to flash-cooking it to 165°F.
This is also why the total sous vide time in a recipe includes two components: the time needed for the food to reach the target temperature all the way through (which depends heavily on thickness), plus the additional holding time needed at that temperature for pasteurization. A thick piece of meat needs longer in the bath before its center ever reaches the target temperature, so recipes for thicker cuts list longer total times even at the identical temperature as a thinner cut.
Boneless chicken breast is commonly cooked in the 140 to 150°F (60 to 66°C) range; 140°F held for about an hour (allowing for both come-up time and pasteurization) yields a very tender, juicy result, while 150°F for around 45 minutes to an hour gives a firmer, more traditionally textured breast that some people find closer to conventionally cooked chicken. Both are pasteurized and safe when the full recommended hold time is used, since sous vide chicken relies on time-temperature pasteurization rather than the instant 165°F kill point used for conventional cooking.
Dark meat like chicken thighs benefits from slightly higher temperatures, typically 165 to 175°F (74 to 79°C) for one and a half to three hours, because thigh meat contains more connective tissue that needs additional heat and time to break down collagen for a tender, non-chewy texture; cooking thighs to the same low temperature used for breast meat often leaves them tough despite being technically pasteurized.
For beef steaks, temperature is chosen almost entirely for doneness rather than safety, since intact cuts (as opposed to ground meat) only carry surface bacteria that searing addresses: 125°F (52°C) for rare, 130-135°F (54-57°C) for medium-rare, and 140°F (60°C) for medium are typical targets, generally held for one to four hours depending on thickness. Tougher, well-exercised cuts like chuck roast or brisket can be held far longer, often 24 to 72 hours at a lower temperature such as 131-140°F (55-60°C), which slowly breaks down connective tissue and collagen into gelatin without pushing the meat past a medium-rare-equivalent doneness.
Pork chops and tenderloin are commonly cooked at 140°F (60°C) for one to four hours, well below the older 160°F USDA guidance that predates sous vide pasteurization science, since 140°F held for the recommended duration achieves an equivalent safety margin while keeping the meat noticeably more tender and moist. Fish is more temperature-sensitive: the FDA's conventional guidance for finfish is 145°F (63°C), and many sous vide cooks use lower temperatures such as 122-132°F (50-56°C) for 30-45 minutes for a softer, more delicate texture; because this falls below standard regulatory safe-cooking temperatures, it depends on strict freshness and sourcing, and more cautious home cooks may prefer to stay at or above 140°F (60°C) for fish.
Eggs behave very differently from meat because the white and yolk set at different temperatures: a "63°C egg" cooked around 145 to 150°F (63-66°C) for 45 minutes to an hour produces a barely-set, custardy white and a warm, still-runny to jammy yolk, a texture that is difficult to replicate with conventional boiling. Raising the temperature to around 167°F (75°C) for about 13 minutes produces a texture closer to a conventionally hard-boiled egg with a fully set, crumbly yolk.
Vegetables are the clearest exception to the usual 'lower temperature, more tender' logic of sous vide: root vegetables like carrots and potatoes stay noticeably firm even after many hours at temperatures below about 183°F (84°C), because the pectin that holds their cell walls together does not break down until it reaches that threshold, regardless of how long it is held below it. As a result, root vegetables are typically cooked at 183-190°F (84-88°C) for one to two hours to actually soften, a far higher temperature than almost any meat or egg preparation, while more delicate vegetables like asparagus or green beans soften at lower temperatures, often in the 180-185°F (82-85°C) range for 10-15 minutes.
